  • I just made the 2nd recipe and they came out pretty descent, except mine was a bit dry but still chewy. I wonder if adding a tbsp or two of applesauce would help with that.

  • If you soak the rolled oats overnight (in water), they will mix in better. I haven’t tried this yet, but I usually soak my oats in advance.

    2 bananas
    1/3 cup (85g) Peanut butter
    1/2 teaspoon Vanilla extract
    1 cup (150g) Quick oats
    1/4 cup (45g) Chocolate chips

    Chocolate Chip oatmeal cookies:
    1 1/4 cup (100g) Quick oats
    3/4 cup (90g) Flour
    1 1/2 teaspoon Baking powder
    1 teaspoon Cinnamon
    1/4 teaspoin Salt
    1 egg
    1/3 cup (106g) Maple syrup
    1/2 teaspoon Vanilla extract
    2 tablespoons Coconut oil
    1/2 cup (90g) Chocolate chips

    Applesauce oatmeal cookies:
    2 cups (160g) Quick oats
    2 tablespoons Dessicated coconut
    1 teaspoon Cinnamon
    1/4 cup (30g) dried Cranberries
    350 g (12.34 oz) unsweetened Applesauce

  • Try taking 11 1/2 cups of rolled oats ground into oat flour in a blender or food processor instead of using the quick oats. Also use the rolled oats in the amount Dani said. It’s still all oats.

I left out the baking powder and added the chocolate chips after it was baked at 350 for 4 or 5 rounds of 10 minutes intervals stirring each time till it got as dry as I wanted it.
